I've checked with Microsoft, and your doing the steps correctly.
I think you should try and change the album art by itself next time.
Just right click on your album and select 'update the album art'. Select a picture that you want, and click open.
The album should now refelct the updated album art. Now connect your Zune, and your album should be updated.
If these steps doen't work, just keep trying, or call Microsoft Support, maybe they could be some help.
